Jennifer describes papusas ...
“They are the best food ever. They have pupserias all over El Sal that are all pretty much the same: long tables with long benches. You order however many of each kind, get a glass bottle of soda with a straw, they leave the salsa de tomate and curtido on the table and bring the pupusas to the table on a big plate and it is chow tiiiiiiime. I'm getting hungry. Oh and sometimes they have live musicians that walk around to the tables and take requests for tips. The best one is Pupuseria Pati in the Escalon district of San Salvador. The other good ones are made by a woman who has like a half barrel that she converted to a grill and she brings it to the sidewalk in front of my grandfather's house and makes them to order. Deeeelish.”
Jennifer also provided a link to a guy singing about his love for papusas. Check it out here.
In addition to the cheese papusa recipe provided above, there are also many other popular versions that contain refried beans, chicarron (sausage) or any combination of cheese, refried beans and cheese.
