Bernie, a good family friend, received this recipe from her niece's boyfriend who is a chef in Ireland. While internationally, the salmon is a less recognized dish compared to those such as Irish stew or bacon and cabbage, fish has always been a staple in the Irish diet. This particular recipe comes from Galway, Ireland, a city on its western shore. While the classic way to cook cook the salmon in the oven, Bernie recommends it grilled. She sent me a George Foreman a week later!
